Cream Puffs

1 c. water
½ c. butter
1 c. flour
4 eggs
whipped cream, ice cream, or pudding
powdered sugar

Pre-heat oven to 325º. Heat water and butter to a rolling boil in a saucepan. Stir in flour, all at once. Stir vigorously over low heat until mixture leaves the sides of the pan and forms into a ball (about 1 minute). Remove from heat. Beat in eggs, one at a time. Beat mixture until smooth and velvety. With a spoon or small cookie scoop, drop balls onto an ungreased cookie sheet. Smooth the dough out a bit. Bake for 25 minutes or until dry. Allow puffs to cool slowly. Cut off tops with a sharp knife. Remove any filament of soft dough inside the puffs. Fill with whipped cream, ice cream, or pudding. Replace tops. Serve cold with powdered sugar sprinkled on top.
