2 large eggs (½ c.) ¼ tsp. baking powder ¾ tsp. baking soda ¾ tsp. salt
2 c. flour ¼ c. buttermilk
1 c. smashed bananas (about 3) ½ c. chopped nuts
1 tsp. vanilla ½ tsp. cinnamon ¼ tsp. nutmeg
Pre-heat oven to 350°. Cream together shortening, sugar, and eggs. Add baking powder, soda, salt, and flour. Mix in buttermilk, bananas, nuts, cinnamon, and nutmeg. Pour into a greased bread pan and cook for 1 hour and 10-25 minutes, or until a toothpick comes out clean.
